How do these models differ? In this family of copiers the number basically indicates the print speed in pages per minute: the C220 is the slowest, the C280 is in the middle and the C360 is the fastest. Otherwise they share the same platform and the same consumable system, so all three use the TN216. Does using a compatible toner void my printer's warranty?

No. According to article 120 of RDL 1/2007 (the General Law for the Defence of Consumers and Users), using compatible consumables does not void the legal warranty of your machine. The manufacturer could only decline to cover a damage if it proves the consumable specifically caused it, something that does not happen with a quality toner.
